Vanilla Cupcake & Butter Cream Frosting Recipes + Chowista Tips + Aquarian Birthday Treat

My parent's owned a catering company when I was growing up so I was constantly around cakes, cookies and sweets. Also my Mom is from the South and My dad is from Libya, which means they both are genetically predisposed to have a huge sweet tooth and they passed this on to me and my brothers. 

Now that I'm older I've taken what Mom and Dad taught me and used it to make one of my favorite desserts-- CUPCAKES. If you've read my other posts you will remember I saw my first love, Jake Gyllenhaal, at a cupcake store in Manhattan. And while I love trying new places--  the budget has gotten a little tight.  One store bought cupcake for $3.00 or 20 delicious handmade cupcakes for $3.00 isn't a choice anymore. 

But hey it's a win win-- because even though I detest the words BUDGET-- I'm learning to look on the bright side-- and these recipes below will taste just as good as momma would make 'em. 

Chowista Tips: READ THESE

** Sometime butter with a high fat content is great, especially in crusts, because it makes the crust very flaky. But in frosting and cupcakes the results may be a little greasier than expected.**
**{As my mom says: "The cheaper the butter the better for butter cream icing."}**

** In a crunch and you want to use store bought cupcake mix. Don't worry, your secrets safe with me. Try spicing it up a little by adding in a tablespoon of vanilla. No one will believe you used a mix ;) **

** Don't keep herbs by the butter, or any other strong smelling food item. The butter will absorb the aromas and you'll end up with a sage buttercream - not so good.**

**Orange, Lemon, or Lime Zest is a great way to add flavor and add a unique twist to decorating your cupcakes.**

**Let your cupcakes cool before applying the icing, otherwise it will melt all over. Ick.**

Vanilla Cake Recipe

  • 1 cup unsalted butter
  • 2 cups sugar
  • 1 1/4 teaspoons vanilla extract
  • 4 eggs
  • 3 cups sifted cake flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • Regular or silver cupcake paper liners
  • Make the Cupcakes: Preheat the oven to 350 degrees F.

In a mixer with a whip attachment, cream the butter until light and fluffy. Add the sugar and continue to cream. 

Gradually add the vanilla and eggs and mix in well. Sift together the dry ingredients; then mix into the butter mixture alternating with the milk.

Pour batter into cupcake paper-lined muffin tins filling them 3/4 full. Bake until puffed and firm in the center and light golden brown on top, about 20 to 25 minutes. Let cool. (Freeze at this point, if necessary.)

Classic Buttercream Frosting Recipe:

1 cup butter (2 sticks or 1/2 pound), softened
3-4 cups confectioners (powdered) sugar, SIFTED
1/2 teaspoon table salt
1 tablespoon vanilla extract
up to 4 tablespoons milk or heavy cream
Beat butter for a few minutes with a mixer with the paddle attachment on medium speed.  Add 3 cups of powdered sugar and turn your mixer on the lowest speed (so the sugar doesn’t blow everywhere) until the sugar has been incorporated with the butter.  Increase mixer speed to medium and add vanilla extract, salt,  and 2 tablespoons of milk/cream and beat for for 3 minutes.  If your frosting needs a more stiff consistency, add remaining sugar.  If your frosting needs to be thinned out, add remaining milk 1 tablespoons at a time.  Enjoy!
